Scope of Work:
Mamar is a modern version of a traditional manakeesh bread bakery, traditionally topped with either zaatar, cheese, or lamb.
Recipes date back to four and a half thousand years ago when flour was crushed between stones, made into a dough, baked, and then served. Eaten at breakfast, lunch, and dinner this dish has not evolved very much over the years. This is where manakeesh comes into the market.
